Alright folks the last competition of the year was today. It's not a huge one but a great way to end the season for us competition wise. We were in the big town of Troy for the Bigfoot bbq competition and we had 2 calls. 3rd in ribs and people's choice champion for our BBQ.

Well I have to say was a great day in stokesdale today. Kevin and I are exhausted. We cooked all day. Started at 4am and last turn in was 3:30. Served hundreds of folks and I couldn't have done it without Jacob, Sarah, Joshua, Kevin, and of course my wife Lee. When the dust cleared, we walked out with 3 ribbons and a 2nd over all. Which would equate to reverve grand champion. Got our very first 1st place in brisket.

Gatlinburg was great. Had an amazing time despite the torrential rains the day of the cook. I just wanted to share that this event was a benefit to raise money for a great cause. The bbq world raises money for several causes and often even gets the leftovers and takes them to shelters to feed folks in need. Even if you never get out to one please think about helping any way you can. Below is the group we were helping raise money for.

Things were wild yesterday with all the rain wind and hail. Had thunder booming right above our heads lightning flashing. Makes cooking on our pit a challenge. But while we didn't win, we did score very well. We had some tough judging tables as we actually were able to know what teams were in our rotations. Overall we were 18th 110 points from first. That's not a huge spread. If little things had been better we would have been in the top 10. All scores were 9s and 10s. Nothing below a 9. So no matter what it was a great weekend. And I got to meet Myron Mixon. He and big Moe Cason are what inspires me to be at the top.

What a day here in Gatlinburg. 1st day got all set up and we'll begin cooking at 430am. Friends on the west coast might have just went to bed! Hopefully tonight we don't have yogi come in and to get our food. Already had one come through the setup here and was promptly chased off.

Good old fashioned southern BBQ at its best. I was taught to serve only the freshest, and best homemade items. All of my recipes are ones that have been passed down to me and altered to meet the needs of those I cook for. We use only all organic ingredients and a whole lot of love.

30 years ago I learned to smoke meats in a barrel, yes a barrel. Thru many years of trials we have perfected all that we do. Everything is slow smoked over just a few types of wood. Everything that we put together has to pass the test or we don’t serve it. Some of my best sauces started as a mistake and became favorites. My smoking style is a Carolina secret infused with Memphis, a touch of St Louis, a smidge of Oklahoma City topped with a bit of Texas. We hand pick our meats which are locally grown and prepare them individually for that home cooked flavor. We specialize in Pulled Pork, Brisket and Tri Tip. We also cook up St. Louis cut ribs, chicken and Turkey. Give us a try for your next catering event.
