💐Perfect for Easter💐 Pairs well with Ham or Pork 💐
Baked Apples
2 Cups Dried Cranberries
1 1/4 Cups Coarsely Chopped Walnuts
1 Cup Packed Brown Sugar
1 Cup Water
2 Teaspoons Ground Cinnamon
6 Honeycrisp Apples, cored and chopped
Combine all ingredients in a large microwavable safe dish. Microwave 20 minutes or until apples are soft. Stirring occasionally . Enjoy!!!

Greek Chicken Meatballs -- From the Foodie Physician
Makes 16 Meatballs
1/2 Package Chopped Frozen Spinach
1 Pound Ground Chicken
1/2 Teaspoon Onion Powder
1/2 Teaspoon Garlic Powder --grated or minced works too.
1/2 Teaspoon Dried Oregano
1/2 Teaspoon Kosher Salt
1/2 Teaspoon Black Pepper
1 Egg
1/4 Cup Crumbled Feta
1/2 Cup Panko Breadcrumbs
1 Tablespoon Olive Oil
1/4 Teaspoon Paprika

Preheat Oven to 400d -- Or Air Fryer 370
Defrost the spinach according to package directions. Squeeze all the water out the spinach and place in large bowl. Add the ground chicken, onion powder, garlic, oregano, salt, pepper, egg, feta cheese and breadcrumbs, Mix to combine. Do not over mix!
Form the mixture into approximately 16 Meatballs.
Place the meatballs on baking sheet sprayed or brushed with olive oil. Mix Olive Oil and Paprika in small bowl and brush mixture onto tops of meatballs,,
Bake meatballs on upper shelf in oven, 15-16 minutes until lightly golden brown. For Airfryer Bake on 370 for 10-12 minutes

Serve Meatballs with: Rice, Pasta, Pita Bread, Vegetables, Tzatziki or Zoodles.
To Make this recipe Gluten Free: Use Gluten Free Panko Breadcrumbs
