*Recipe time!
Despite covid and no retreat catering I have kept up my creative skills and recipe experimentation over the last few months. I want to start sharing my dishes and give back to all of you.
*Cindi's Cafe cake
I first developed this while I was working at Circle of the Sun Cafe on Maui in 1988.

9X13 baking pan. 350°
*Dry ingredients
3c Pamela's baking mix
1c sugar
Dash of cinnamon
*Wet ingredients
3/4c soft or melted butter
2 eggs
1.5 c milk
1tsp vanilla
* crumb topping
1c brown sugar
1/2c melted butter
1/2c flour
1Tbs cinnamon
1c chopped nuts
Pinch of salt
Add to the cake after it firms up in the oven- 20 min. Keep cooking till done.
Mix each bowl throughly then gently mix them together. Do not over stir a GF batter.
Bake for 30 mins aprox or until the middle springs back and the edges have pulled away from the sides. Do not over cook a GF cake or it will be dry and tough.

This had been my basic cake recipe for everything. Birthdays, weddings, holidays or a simple coffee cake for the morning. Substitute oils or sugars that you prefer. I use coconut milk mostly now too.

I have begun making meals for friends in my community. It's been helpful for me to stay creative and begin to cook for people again. Slowly and safely of course.
