I was floored the first time someone coming through my kitchen asked about the giant bags of carrots there because they didn’t know carrot cake actually existed had carrots in it. Since that time I’ve had the same conversation over and over. The best Carrot Cake is LOADED with carrots! (What way to get your veggies in 😉)

When I got this request from one of my November brides, I honestly teared up! Her 98-year-old grandmother was unable to travel to the wedding, but they wanted to share the cake with her. So, the next time they were in town I made two little mini cakes in the same flavors as their wedding cake for them. She picked up one for herself and her new husband, and one to bring to her grandmother! I can’t get over how sweet the gesture is! ❤️🤍❤️
