Happy Sunday Holties! We have a few new menus coming your way!

The first comes after some of our busy friends requests the past few weeks:
Please make some easy dinners, we are tired of drive through meals that are breaking the bank!

By the time we get out of practice and get home from work I need to help with homework and everyone is hungry.

Can you please make some meals where I don’t have to do dishes?!

When we get home everyone is starved and I’m exhausted!

Can you just come to the house and cook for us in the evenings?

😂I get it… I totally do… everyone is spread thin and life is busy.

While I can’t offer the last request I think I can help with some of the others

So here is what we come up with… twice a week meals made fresh the morning of pickup, easy reheat, almost no cleanup, real food, and you know it’s going to be good!

We hope this helps make your days a little smoother and less stressed 💖

It starts out pretty good, everything seems to be coming together and panning out…

Crowd pleaser recipe! People always love this Marinated Cheese we bring to share at personal gatherings. It’s so easy to make and once the cheese is gone the marinade makes a flavor bomb salad dressing or dip for bread!

Ingredients:
Marinade:
½ cup olive oil
1 cup red wine vinegar( white wine vinegar is good too)
1 jar diced pimento drained
3 T. chopped fresh parsley (or 1T dry)
3 T. minced green onions
3 cloves garlic, minced (or 1T garlic powder)
2 tsp. sugar
2 T. fresh basil chopped (or 1 tsp. dried)
1 T. fresh dill chopped (or 1tsp. dried)
1/2 tsp. dried red pepper flakes
1 tsp. black pepper
1 tsp.salt
Mix well or shake in a jar until combined.

Slice into cracker sized slices:
1 (8 ounce) package cream cheese, cold
2 (8 ounce) blocks of your favorite cheese ( I prefer cheddar & havarti)

Stack slices like horitonzal dominos in a 6x8 container. Pour marinade over cheese. Refrigerate for at least 6 hours before serving. Good for 3 days when refrigerated. Serve with crackers, pita, or bagel chips. Enjoy!

Other cheeses that work great: Feta, Monterey Jack, Pepper Jack, Colby Jack, & Mozzarella

Did you know tomatoes will continue to ripen even off of the vine?

We had some of our tomato plants get damaged in a storm the other day but these beauties are still sunbathing to their potential ☀️✨

Placing them on a vented surface like a crate or grate works best, outside where the sunshine can continue to ripen them. You’ll see them ripen more each day, dont forget to rotate 🍅

My Oh My Fresh Tomato Pie! 🍅 🥧 🧀

Tomato pie… fresh garden tomatoes, cheesy layers, bacon, flaky pie crust, topped with homemade bread crumbs and baked to perfection!

It’s hard to beat a great Low Country Boil…or as I like to call it the “Circle of Silence” meal… everyone is quick to gather around the table and too busy with their mouth full to conversate ❤️

Over the years I concocted my version of the perfect way to get the most flavorful broth to create the perfect Seafood Boil.
Here’s my take:

1 gallon of Sunny D—yep that’s right.. orange juice works just the same if you prefer
1 lb. Salted Butter
1/2 gallon of water
1 sachet of seafood boil seasonings—I like Zatarain’s Crawfish Shrimp & Crab Boil
1/2 bottle of Zatarain’s Shrimp and Crab Boil Concentrate
2 onions peeled and quartered
1 head of garlic— break the cloves up, dont worry about peeling them
2 oranges halved
2 lemons halved
Any fresh herbs you have on hand—I like rosemary, basil, sage, and thyme
3-4 bay leaves
A couple of celery stalks
3T Old Bay seasoning

Boil everything above covered slow for 30-45 minutes before adding your meal ingredients. I like to add the rest of my ingredients in this order and time frame:

1. Shuck 3 ears of corn and break into 1/3’s
Add corn and 1 lb. baby potatoes— boil covered for 10 minutes
2. Cut 1 lb. Keilbalsa into 1/4” slices—add to pot and boil covered another 10 minutes
3. Add 4 lbs. crab legs—boil covered another 5 minutes
4. Add 2 lbs. shrimp—boil covered another 4 minutes

Remove all ingredients and strain onto a surface covered with Butcher Paper or Brown Paper Bags work well too. Serve with drawn butter, cocktail sauce, & thick bread.

You will need a 20-30 quart stock pot for this recipe.

I will be posting my cocktail sauce recipe as well as my quick crusty bread recipe.
