Why pulling a knife through a cheap sharpener ruins the edge.

1. It removes far more metal than necessary.

A knife only needs the very edge refreshed. Most inexpensive pull-through sharpeners grind away a lot of steel every time you use them.

2. It creates a rough, jagged edge.

Many low-cost sharpeners use coarse carbide inserts that scrape metal off instead of refining it.

The knife may feel sharp for a day or two because it has tiny “teeth,” but those break off quickly, leaving the knife dull again.

3. It changes the blade’s shape.

Every pass removes steel from the entire edge. Over time you’ll notice:

* The blade gets narrower.
* The belly changes shape.
* The tip becomes thicker or rounded.
* The knife no longer cuts the way it was designed.

This is especially noticeable on quality chef’s knives.

4. It can’t follow the knife’s original geometry.

Most pull-through sharpeners force the blade into one fixed angle.

But different knives are designed differently:

* Japanese knives often have more acute edge angles.
* German knives typically use slightly wider angles.
* Some knives are asymmetrical

A fixed-angle sharpener may grind away the factory geometry instead of preserving it.

5. It often leaves a burr.

A burr is a thin flap of metal pushed over the edge. Cheap sharpeners may leave a large burr attached.

The knife feels incredibly sharp at first, but once that burr folds over or breaks off, the edge quickly loses its bite.

6. It can chip harder steels.

Premium knife steels are harder than budget stainless steel. Aggressive carbide sharpeners can chip or micro-fracture these harder edges instead of cleanly sharpening them.

7. Professional sharpening removes less metal.

Your goal isn’t just to make the knife sharp—it’s to preserve the life of the knife.

A professionally sharpened knife:

* Maintains the correct edge angle.
* Removes only the metal that’s necessary.
* Produces a smoother, longer-lasting edge.
* Keeps the blade’s original profile for years.

A cheap sharpener doesn’t ruin your knife in one use. It ruins it a little bit every time. My job isn’t just to make your knife sharp—it’s to make sure it’s still a great knife 20 years from now.
