Sweet Potato and Black Bean Chili Recipe!
Sweet Potato & Black Bean Chili

Recipe Adapted
Taste of Home- Soups (PG 195)
3 large sweet potatoes, peeled and cut into 1/2-inch cubes
1 large onion, chopped
2 tablespoon olive oil
*2 packs of chili seasoning (Mild)
*2 envelops Sazon Goya seasoning
3 tablespoons of garlic, minced
*1 cup mango salsa- Newman’s Own (Do Not Omit) *TKO*
2 cans (15 ounces each) black beans, rinsed and drained (Reduced Sodium)
*1 can (15 ounces) diced tomatoes, undrained (Reduced Sodium)
*1 cup brewed coffee- (Do Not Omit) *TKO*
*South African Smoke Seasoning Blend- Trader Joe’s (Do Not Omit) *TKO*
(Paprika flakes, Sea salt, Garlic, Basil)
In a nonstick Dutch oven coated with cooking spray, sauté sweet potatoes and onion in oil until crisp-tender. Add the chili packs, garlic, South African blend, and SazonGoya; cook 1 minute longer. Stir in the beans, tomatoes, mango salsa, coffee.
Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until sweet potatoes are tender.
