Little Gem lettuce with green goddess, pistachios, and herbs.

Little Gem is the overachiever of the lettuce world: crisp like romaine, tender like butter lettuce, and sturdy enough to hold a creamy dressing without wilting under pressure.

Add pistachios for crunch, herbs for lift, and suddenly the salad course is doing a whole lot more than sitting there looking green.

We had such a great time catering this event! Every part of the evening felt polished, welcoming, and thoughtfully planned.

For gatherings, the food has to do a lot. It needs to look beautiful, move smoothly, give guests options, and still feel memorable. This menu did exactly that, with a charcuterie station featuring local and imported cheeses, Creminelli salami, local honey, fruit, jams, crackers, and crostini, followed by a fall tapas buffet with short rib and creamy polenta, saffron chicken skewers, sweet potato crisps, and seasonal salads.

Big shoutout to the incredible team who brought everything together so beautifully. We loved being part of it!

Carolina pork with mustard cider vinaigrette and pickled onions. Beef chuck with artisan cheddar, angry onions, and Utah fry sauce. Sweet potato fries right there on the side.

Made at the station by our team, served hot, stacked with all the good stuff, and absolutely worth hovering nearby for.

Tartare tends to make people curious fast.

Is it raw? Is it safe? Why is it considered fancy? What’s the difference between tartare, ceviche, sushi, and carpaccio?

Today on the blog, we’re answering all of it. We’re talking premium sourcing, careful temperature control, knife work, seasoning, texture, and why tartare is one of those dishes where every detail matters.

Beef, ahi tuna, tomato, tableside service, all the questions.

Ever watched donuts get flambéed? We highly recommend it.

Our team fired up these donuts live, then topped them with authentic Italian gelato in biscoff, strawberry, and chocolate. Warm donut, cold gelato, a little flame, and suddenly dessert is the main event.

A little summer cocktail hour lineup we were very happy to send around the room: fried Asiago with roasted tomato and pesto, compressed watermelon with arugula and balsamic honey, al pastor demi tacos with pineapple salsa and cotija, and fresh berry skewers.

Which one are you grabbing first?
