PEANUT BUTTER CHICKEN
Peanut Butter Chicken is crispy chicken tossed in a creamy peanut sauce with red bell peppers and ginger. Serve over rice and skip the takeout tonight.
For the Chicken:

1 pound chicken breast, skinless, boneless
1 teaspoon salt
1 teaspoon black pepper
1 egg, lightly beaten
⅓ cup cornstarch
2 tablespoons vegetable oil

For the Stir Fry:

1 teaspoon vegetable oil
1 red bell pepper, diced
1 teaspoon ginger, minced

For the Peanut Butter Sauce:

⅓ cup smooth peanut butter
1 tablespoon soy sauce
1 tablespoon chili paste
¼ cup water

🌻🧺 Sunflower Basket Cake

🧁 Ingredients
For the Cake Layers
4 cups (500g) all-purpose flour
3 tsp baking powder
½ tsp salt
2 cups (400g) granulated sugar
1 cup (225g) unsalted butter, softened
6 large eggs
1 tbsp vanilla extract
1½ cups (360ml) whole milk
For the Vanilla Buttercream
2 cups (450g) unsalted butter, softened
6 cups (720g) powdered sugar
2 tsp vanilla extract
3–4 tbsp milk
For Decoration
2 kg ivory fondant
500 g light brown fondant
300 g yellow fondant
150 g dark brown fondant
Gum paste for sunflower petals and leaves
Green food coloring
Edible glue
Cake dowels for support
Cornstarch for rolling
🎂 Instructions
1. Bake the Cake Layers
Preheat oven to 175°C (350°F).
Grease and line three round cake pans of different sizes.
Mix flour, baking powder, and salt.
Beat butter and sugar until fluffy.
Add eggs one at a time, then vanilla.
Alternate adding dry ingredients and milk.
Divide batter among pans.
Bake for 30–40 minutes.
Cool completely before decorating.
2. Prepare the Buttercream
Beat butter until creamy.
Gradually add powdered sugar.
Add vanilla and milk.
Beat until smooth and fluffy.
3. Assemble the Three Tiers
Level the cakes.
Fill with buttercream and stack each tier.
Apply a crumb coat and chill.
Add a final smooth buttercream layer.
Cover each tier with ivory fondant.
Stack all three tiers using dowels.
4. Create the Basket Weave
Roll light brown fondant thinly.
Cut into long strips.
Attach strips around each tier in a woven basket pattern.
Lightly dust with darker brown coloring for a realistic wicker effect.
5. Make the Sunflowers
Roll yellow gum paste and cut sunflower petals.
Shape petals and allow them to dry slightly.
Create flower centers using dark brown fondant.
Assemble large and small sunflowers.
Make green leaves from tinted gum paste.
6. Decorate the Cake
Arrange sunflowers generously around the top tier.
Create a cascading sunflower display down one side.
Add green leaves between flowers.
Place a fondant basket handle arching behind the top tier.
Finish with subtle rustic details and texture.
