Interpreting someone else’s menu while preparing for guests has been one of the most difficult inter personal conversations with myself since starting with . This past weeks rehearsal dinner guests enjoyed bronzino with caponata . slayed the cap for me ! butchering the fish, all I had to do was execute seamless with my crews in 3 locations! This week everyone’s help to continue the growth in these destination restaurants has granted myself and others the confidence to know we are consistently focused on evolving in this industry ! ♥️♥️♥️ big thanks to my top dogs !
