It was a very hot Saturday, but everyone beat the heat and did a fantastic job pulling everything together for Courtney & Matt's gorgeous wedding day that that they worked incredibly hard planning! Everything was taken place on their property and all the details from the florals, furniture set ups and catering was just amazing. Courtney made a gorgeous bride. Congratulations you two and loved celebrating with you!

This week's featured Food Waste Challenger Birchtree Catering is fighting everywhere they go 🚚♻️ - from the homes of fellow Philadelphians, to event halls and holiday parties.
They're already leaders in sustainability and waste reduction and joined the Challenge to keep themselves accountable and edge closer to zero food waste:

Before they've even arrived for a catered event, Birchtree Catering is thinking about how they'll keep as much waste out of the landfill as possible.
Post-consumer waste is hard to control, and they've already implemented a few strategies:
♻️ Bringing compost buckets and compostable bags to all events
🥤 Providing disposable birch tree patterned paper straws and other compostable products at events, including tongs, popcorn cups, and more

The new pilot program will directly tackle restaurant food waste in the city. See more here ⬇
The Network for Sustainable Meetings & Events held our latest meeting last week. We had Allegra Derengowski join us to discuss how she made her catering company, Birchtree Catering more sustainable by reducing waste and composting food scraps.

Allegra Derengowski, owner of Birchtree Catering is building a New Kitchen Culture, while educating her staff & customers about why it’s important, how it can be achieved and what it costs. Here’s what Allegra had to say on the topic of changing kitchen culture:
“We added policies to our employee handbook last year that dictate how to behave on our staff, including using the correct pronouns when they're known of co-workers, calling out bias when it's noticed, and working on de-escalation before taking more drastic measures. Because we're in events, I also gave my employees the green light to walk away from guests or refuse service if necessary if they didn't feel respected.
We consistently promote our responsible business practices to our clients, through conversation and marketing materials, so that they know we are an inclusive group, and we pay our employees a living wage.
We have a $15 minimum wage, which is achieved by both the base cost of the employee, plus the built-in operations fee (gratuity) that we charge our clients. We guarantee a percentage of the menu cost as payment for the staff, including the back of house, so that it is consistent. For my full time employees I offer health insurance, and we're working on including a 401K program through the Sustainable Business Network. We also have a paid referral system so that we have friends of friends coming on to the team, which helps to build a strong supportive network of employees.”
