On Thursday, August 27th, founders Niki Toscani and Mike Sicinski are teaming up with Uchi, Chef Tyson Cole’s award-winning Japanese restaurant located inside the Josephine at 1620 Sansom Street in Philadelphia’s Rittenhouse neighborhood, for a nine-course dinner with each dish having some type of pickle-centric component to it.
The collaborative menu will feature a raw oyster with giardiniera, mapo oil, and fennel pollen; nigiri round 2x2 – bluefin akami (fukujinzuke relish, aged tamari), and dry-aged madai (pickled kombu); sunomono – yuzu kosho, summer squash, pepperoncini; hamachi crudo – yellowtail, pickled peach, ginger lemon pickle ponzu; chicken karrage – brown butter habanero, seasonal pickle, dill; nigiri round 2x2 – house pastrami, nikiri, dill pickle relish x pickled aji tama quail egg; mi-cuit salmon – rainier cherry mostarda, pickled enoki, brood; kinoko nabe – dill sesame relish, chanterelle, egg yolk; and okashi – popcorn mousse, pickle jam, blueberry sorbet for dessert.
Reservations for the one-night only dinner cost $125 per person plus tax and gratuity. Tickets can be purchased here for seatings at 6 and 8:30 p.m.
