Zenja's Sweet Cups Pecan Pie Cheesecake. This cheesecake combines the rich, creamy texture of cheesecake with the caramelized crunch of pecan pie topping.

Ingredients:

85g Graham crackers, finely crushed

4oz Pecans, roasted and finely ground

2 tbsp Caster sugar

2oz Butter, melted

16oz Cream cheese, softened

50g Caster sugar

212g Brown sugar

1 tsp Ground cinnamon

2oz Greek yogurt

2oz Heavy cream

1 tbsp Pure vanilla extract

2 Large eggs

3 tbsp Unsalted butter

½ tsp Salt

2 tbsp Heavy whipping cream

1 tsp Pure vanilla extract

1 cup Whole unsalted roasted pecans

Instructions:

Preheat oven to 325°F (163°C). Grease a 6-inch springform pan.

Mix crushed graham crackers, ground pecans, sugar, and melted butter. Press into the bottom and sides of the pan. Bake for 5-8 minutes, then cool.

Beat cream cheese, sugars, and cinnamon until smooth. Add yogurt, heavy cream, and vanilla. Mix in eggs until just combined.

Pour batter into the crust and bake in a water bath for 70-80 minutes. Let cool in the oven for an hour, then refrigerate overnight.

Prepare the pecan topping by melting butter, salt, and brown sugar. Slowly add heavy cream, vanilla, and roasted pecans.

Pour the pecan sauce over the chilled cheesecake before serving.
