Maybe meal prep doesn’t have to mean having the whole week figured out.

On Sunday, I pick out a few proteins I know I’ll want to eat during the week and move them to the fridge to thaw.

For Monday, it’s our boneless, skin-on chicken thighs, and I have my cooking technique down thanks to Alton Brown.

My favorite way to cook them: start them skin-side down in a cold stainless steel pan — no oil, no butter — and leave them alone until they release easily. Then flip them and finish them in the oven.

You end up with deeply browned, crispy skin and juicy chicken with almost no effort.

Seriously, if skin-on chicken thighs intimidate you, this technique may completely change your mind.

And that’s about as far ahead as I need to be on a Monday morning.
