We're opening another wheel of Cypress Grove's Midnight Moon. It's a goat cheese that's been aged for at least a year resulting in a cheese with a nutty and brown-buttery flavor. This artisanal Gouda-style cheese has a beautiful pale, ivory color. The texture is firm and dense and the taste is smooth with a slight graininess that long aged cheese's have. One customer recently described it as "smooth on the inside, and paradise on the outside."

Ask for a sample. You must try this.

New arrival! Sottocenere al Tartufo translates "under ash" for this ash rubbed semi-soft cows milk cheese. It is rubbed and then aged with nutmeg, coriander, cinnamon, licorice, cloves, and fennel. The delicate and aromatic paste is laced throughout with slivers of black truffle.

New arrival! Blue Ledge Farm Middlebury Blue, and Camembrie.

Middlebury Blue is a raw cows milk blue, made with Ayrshire milk from a neighboring farm in Vermont. Aged 60 days,it is both creamy and crumbly and dare we say "town meets gown", that unique experience when good earthy Vermont grit meets smooth high brow academia with nothing short of poetic results.

Stay tuned, and we will talk more cheese (and just wait to see what we will do with that Camembrie)!

It is cured, sweet finish cheddar bathed in green chartreuse liquor, The chartreuse adds a delicate herbal bouquet with hints of cloves, citrus, rosemary, and thyme that beautifully complements the cheese's creaminess while imparting a light green hue. The cheese is wrapped in a chartreuse-green foil symbolizing its uniqueness.
