We are doing a little affinage in the aging room this morning 🤓🧀🔎Affinage is the art of aging cheese and each batch gets a a little different treatment. From washing the rind in a brine solution, brushing the outside to create a natural rind or simply flipping the wheels to ensure even aging. It’s a very hands on process! We are so excited for our cave to begin looking more full and shoutout to who made most of the wheels in the aging room!

The only photo I managed to take from this past Supper Club by This is the main course Doro Wot that included a rich, savory sauce with a half chicken and a beautiful poached egg!
