Mediterranean Pan-Seared Sea Bass
Light, fresh, and packed with bold flavor—this one’s a winner. Perfectly seared sea bass with a crispy crust, finished with lemon and topped with a vibrant bell pepper, garlic, and olive medley. Clean, simple, and absolutely 🔥
Ingredients:
4 sea bass fillets (skinless)
Salt, extra virgin olive oil
1 green bell pepper, chopped
1 red bell pepper, chopped
3 shallots, chopped
4 garlic cloves, minced
1/2 cup Kalamata olives, chopped
Juice of 1/2 lemon
Spice Mix:
1.5 tsp coriander
1.5 tsp garlic powder
1 tsp Aleppo pepper or paprika
1 tsp cumin
1/2 tsp black pepper
Directions:
Salt fish and rest 20 min. Mix spices.
Cook veggies in olive oil over medium-high heat with salt + 1 tsp spice mix for ~5 min. Reduce the heat, stir in the olives, and keep warm.
Season fish with remaining spices. Heat oil in a pan, then cook the fish for 4–6 min (don’t move it). Flip and cook 3–4 more min until golden.
Finish with lemon juice. Serve topped with pepper mixture. Optional: couscous or rice.
