Our Slow Roasted Pulled Pork Nachos start with pork marinated in orange juice, lime juice, and our own blend of herbs & spices before being slow roasted until fall-apart tender.

Then we load them up with:

• Warm blanco cheese dip

Our Salumi Box isn’t some sad gas station snack tray pretending to be “charcuterie.” 😏🍷

We build these fresh in-house with the same mindset we use for our pizzas — quality ingredients matter.

Inside the box:

• Imported Genoa Salami
• Imported Soppressata — sliced fresh in-house
• Aged shaved parmesan
• Mediterranean olives
• Sweet fig jam
• Fresh red grapes
• Hot giardiniera for a little kick

And the almonds?

We roast them in-house with orange zest, warm spices, pure vanilla, and a little Two Brothers love. The smell alone should probably be illegal.

🐷🔥 WHY WE USE SPECK ON OUR PIGGY WENT TO PARADISE

Because some ingredients are worth the extra effort.

Speck isn’t your average ham.
It’s a traditional Northern Italian cured meat from the Alpine region of South Tyrol — where it’s carefully seasoned with salt, pepper, juniper, and spices… lightly cold-smoked… then aged for months in cool mountain air. 🇮🇹

The Italians describe the process like this:

“Little salt. Little smoke. Lots of fresh air.”

That’s what gives Speck its incredible flavor:
Smoky like bacon…
Silky like prosciutto…
Rich without being heavy.

And honestly?
It’s not something you stumble across every day in rural Missouri. 😅

Most places use whatever’s easiest to source.
We went looking for ingredients with tradition, craftsmanship, and flavor worth talking about.

Because that’s what Neapolitan pizza is really about.

Every Italian pizza maker just clutched their apron dramatically.

In Naples, they traditionally don’t slice Neapolitan pizza because it’s made to be eaten fresh, hot, and usually by one person with a knife and fork. The center is soft, the crust is airy, and the whole thing is basically controlled delicious chaos. 🤌

If they sliced it too early?
That beautiful center would fold faster than a lawn chair at a family reunion.

Now here in America… we know people expect slices, so yes — we slice ours. 🇺🇸🍕

BUT if you want to try it the traditional Neapolitan way, let us know and we’ll happily leave it unsliced for the full Italy experience.

Just remember: Neapolitan pizza isn’t really “shared food” in Italy.

One pizza = one person.

We’re not saying you can’t share… we’re just saying an Italian grandmother might judge you a little. 😅🍕

Everyone asks why Neapolitan pizza looks “simple.”

Where are the 14 toppings?
Why isn’t it buried under cheese and meat?
Why is it smaller?

Because real Neapolitan pizza is about BALANCE — not chaos. 🍕🔥

A true Neapolitan pie is designed so every ingredient has a purpose:
✔ Light airy dough
✔ Bright tomato sauce
✔ Fresh mozzarella
✔ Fresh basil
✔ High heat
✔ Fast bake

That’s it.

When you overload a pizza, a few things happen:
➡ The crust gets soggy
➡ The cheese turns greasy

Neapolitan pizza was built around restraint.

Some pizzas are dinner. This is a craft.
Real Neapolitan Margherita follows rules older than the state of Missouri. We follow them anyway.
🍕 The Dough — 00 flour, water, sea salt, yeast. Four ingredients. Fermented 24 hours so the wild yeast breaks down the starches before they get to you. That's why our pizza doesn't sit heavy.
🍅 The Sauce — Whole San Marzano tomatoes from the volcanic soil at the base of Mount Vesuvius. They come in a can — because that's how Italy ships the best ones, sealed at peak ripeness, no preservatives. We hand-squeeze every tomato ourselves and add sea salt and fresh basil. No jar. No sugar. No paste.
🧀 The Cheese — Grande whole-milk mozzarella. The premium cheese serious pizzerias use — and the one most pizza places skip because it costs nearly double bulk mozz. We pay the difference. You taste it.
🔥 The Oven — 850°F. About 90 seconds. That blistered char on the crust — real ones call it "leoparding" — only happens at that kind of heat.
🌿 Topped with fresh basil. That's the pizza.
No preservatives. No conditioners. No shortcuts. The way Naples has done it for 250 years, served at an Irish winery in Oronogo, Missouri. Capisce?
