I grew up calling it "Makayabu"; Lingala for Congolese Salty Fish Dish. Known for its taste and its great look on a plate when garnished with onions and bell peppers; it is a great dish to share. I remember sharing it one time and the first two bites were immediately followed by the word "Bacalao." Then I learned of a Puerto Rican Fish Dish made with salted fish. The way Makayabu and Bacalao roll in the tongue and rhyme remind me that food in its uniqueness and its diversity can be a great unifier and makes the world seem small.
