Aquafaba Mayo 1/2 cup chickpea juice, 1 tsp salt, 1 tablespoon vinegar, 1/2 tsp pepper, 1 cup olive oil. Place all ingredients except oil in blender. Slowly drizzle in the oil over a minute’s time while blender is on low setting. You will never buy mayo again. Want it flavored? Add lemon or garlic or whatever you like to the blender before emulsifying.
