Easy Shepherd’s Pie for 2
No Tomatoes, Peas, or Carrots
Ingredients
Meat Filling
* ½ lb ground beef (or ground lamb)
* ¼ small onion, diced
* 1 clove garlic, minced
* 1½ tsp Worcestershire sauce
* ½ tsp onion powder
* ½ tsp garlic powder
* ½ tsp dried thyme (optional)
* ½ cup beef broth
* 1½ tsp cornstarch
* 1 tbsp cold water
* Salt and black pepper to taste
Potato Topping
* 1 large russet potato (about 10–12 oz), peeled and cubed
* 2 tbsp butter
* 2 tbsp milk, heavy cream, or half-and-half
* ½ cup shredded cheddar cheese (optional)
* Salt and pepper to taste
Instructions
1. Prepare the Potatoes
1. Place potatoes in a small pot and cover with water.
2. Bring to a boil and cook for 12–15 minutes, until fork-tender.
3. Drain and mash with butter, milk, salt, and pepper.
4. Stir in ¼ cup cheese if using.
2. Make the Filling
1. Preheat oven to 375°F.
2. Brown the ground beef and onion in a skillet over medium heat.
3. Add garlic and cook for 30 seconds.
4. Stir in Worcestershire sauce, seasonings, and beef broth.
5. Mix cornstarch with water and stir into the beef mixture.
6. Simmer 2–3 minutes until thickened.
3. Assemble
1. Transfer the beef mixture to two small ramekins or one small baking dish.
2. Spread mashed potatoes over the top.
3. Sprinkle with remaining cheese.
4. Bake
* Bake for 15–20 minutes, until hot and bubbly.
* Broil for 1–2 minutes for a golden, cheesy top.
Optional Add-Ins
* Sautéed mushrooms
* Corn
* Chopped spinach
* Green onions
Serve with a side salad or roasted broccoli for a complete meal. 🥔🥩💕
