You guys LOVE this casserole. I do too! Go to any pot luck dinner or lunch at any "girly" restaurant and you will see this on the menu. I've had them all and the secret to mine, is how I cook the chicken. Along with love. (I do love making this casserole!) I flavor it as I'm cooking with my secret spices! Hand shredded chicken, creamy poppy seed sauce and a crunchy cracker topping is what we all want in our oven after a long, hard day's work. Knowing you don't have to even clean up is even MORE worth it, right???
This goes great with a side of rice or noodles. Green beans or a side salad make it complete!! Don’t forget the warm dinner rolls!!

Hello ALL!!
I wanted to update you on my cooking schedule amidst Covid-19. Right now, I will be taking a break from cooking during this time. With the kids home and hubby working from home... my kitchen isn’t MINE anymore 😩. If/when the kids get back to school on a regular basis is when I will re-evaluate my cooking schedule. I want to give YOU(my valued customers) the utmost care and attention when making homemade goodness for you and your family!!
I want to say that I miss the good ‘old days of getting in my kitchen and mixing, chopping and cooking up delicious casseroles for your family around that dinner table!

Don’t be standing around with NOTHING to eat this week! Be the hero with everyone’s FAVORITE ENCHILADAS! Who doesn’t love homemade enchiladas???? Especially ones that you don’t have to make OR clean up?? Yes, please!!
I had a little EXTRA ingredients which makes for EXTRA ENCHILADA CASSEROLES!! Woo hoo! This casserole goes wonderfully with black beans and rice! Believe me... it’s our side dishes of choice with this beautiful dish!

These Chicken Enchilada's are TO DIE FOR!!! I season the chicken breasts with a delightful blackened seasoning and make a HOMEMADE cream sauce that will make you want to slap somebody it is SO good! I throw in a few green chilies to the sauce and layer it with flour tortillas and some hand shredded Monterey Jack and Cheddar. Oh. Yes. I . Do. Simple, Delicious and Oh, So, Homemade!! Yumm-o. This dish goes perfect with some Mexican Rice and some simple refried or black beans
