✨🌿 Our final summer collaboration with is a fragrant, versatile syrup that captures the delicate notes of fresh bronze fennel. Bronze Fennel is an herb that has a sweet, anise-like flavor present in the leaves, seeds, and flowers. For this recipe we used the leaves also known as fronds.

Chef demos this recipe that reminds us to use what grows close to home and how a simple syrup can brighten your favorite summer sipper.

Bronze Fennel Simple Syrup

• 1 cup sugar

• 1 cup water

• 1 cup fresh bronze fennel leaves

• Dash of salt

Bring sugar, water, and salt to a boil, stirring to dissolve sugar. Remove from heat and stir in chopped fennel fronds. Let steep for at least 15 minutes. Strain and store covered in the fridge for up to 2 weeks.

✨ Try it with sparkling water for an herbal soda or a splash in sparkling white wine for a garden-inspired spritz.

Meet Helen, our resident dessert magician, plant whisperer, and all-around kitchen powerhouse. With a heart rooted in nature and a pantry full of seasonal inspiration, Helen brings care and creativity to every dish (and every puzzle she solves on her day off).

She grew up cooking alongside her mom, pretending they were French chefs hosting their own show. Today, she brings that same joy and imagination to Goosefoot. Whether she’s whipping up something sweet, foraging flavors from local farms, or nurturing her 75+ houseplants, Helen reminds us that food is love, and community is everything.

Now based in Cincinnati, she crafts meals rooted in the seasons, with a commitment to using locally-sourced ingredients and reducing food waste wherever possible.

Currently delighting private clients with her thoughtful menus and signature red-handled spatula, she’s also known for her top-tier food puns and dedication to nourishing both people and planet.
