we get a lot of questions about scallops and how to prepare them. here are 3 tips from :

-always buy fresh, local, dry packed scallops at your fish market
-sear in a hot, iron pan with blended oil (not olive oil)
-cook for 2 minutes on each side or until you see that dreamy seared scallops color (see photo)

we buy from a few local fish markets but tonight’s scallops came from and were harvested 3 miles off the coast of plum island on monday. they were sweet like candy and the thyme browned butter drizzle made them 👌🏼
