Earlier this year, invited us to work on this conceptual dining experience — where the tablescape, along with the food, evolved course by course.
It was a flower choreography of sorts — each course had to layer upon the last, feel fresh and surprising with each course, and be able to be seamlessly set by the wait staff. But of course, we jumped on it.
The meal began with a barren table, symbolizing earth just after winter — bare branches and quiet stillness. With each course the table transformed : plates, napkins, flatware, cocktails, food, flowers, menus shifting from earthy browns to fresh greens, early buds and butter yellows, to the final course of a pink-tinged floral meadow running down the table.
