And like all words, people have shortened the expression simply to “Imas” pronounced, EEMAS! Eemas Cuisine is a food stand that delivers American Regional fare utilizing local and sustainable ingredients found in New Jersey and New York. From the Hawaiian islands to the bayou

s of Louisiana and from the New England states to the hospitality the South offers, Eemas Cuisine strives to give you a little taste of everything our country has to offer. EC takes the best and favorite foods of our country’s regions, incorporates some fresh ingredients only found in the tri-state area, and applies a culinary twist before introducing it to your palate.

Chef Flo’s favorite, our Kalua Pork Musubi, features pork butts slow-braised for five hours in banana leaves with citrus, secret ingredients, and a hint of liquid smoke. (He wishes he could bury them underground with coconut husks and hot stones for that authentic touch!) Once incredibly tender, the pork is mixed with chopped cabbage and stewed in its own flavorful braising liquid. Like our other open-faced musubis, it’s served over seasoned rice and arugula, wrapped in nori. fo’sho! 🤙🏽
