Posting cooking content online has been eye-opening over the years. Something as simple as straining grease to reuse it, people will say they never thought to do that. Or they didn’t know you COULD do that.

I realized that a lot of folks just weren’t raised in the kitchen.

I’m just happy to pass on the some things my elders taught me, what feels like second nature to me.

Although greater Louisiana had locations, I do not recall a single Waffle House in the New Orleans area before Katrina. The closest was probably Laplace.

Mushroom Cream Sauce Chicken

Step 1: Chop mushrooms, onions, and parsley. Season chicken (Creole, Rotisserie, white pepper).

Step 2: Dredge chicken in flour. Pan-fry in avocado oil until golden brown; set aside.

Step 3: In the same pan, sauté onions, mushrooms, and parsley. Add butter.

Step 4: Sprinkle in 2-3 teaspoons flour; stir for 1-2 minutes to make a roux.

Step 5: Pour in wine, scraping up browned bits; let reduce.

Step 6: Pour in heavy cream; simmer until thick.

Step 7: Return chicken to the pan and simmer to coat. Serve over mashed potatoes or rice
