petals of texture in BUTTERCREAM !
I developed this technique last weekend. Sure there are lots of cake mediums that are easier to develop an interesting look but nobody speaks to the ease of cutting and the taste. That is where buttercream still shines when made right. Hand carved « ginko » veining brought this texture to life💫

I ran across this letter while searching for an old recipe today. With so many years as I chef, there are notebooks and notebooks from before the digital age.
I’m flooded with memories as I look through them; each one , a special friend. It has been hard work, but such a full on love affair with food, flavors and festivities. I wouldn’t change it for anything!
This letter is so sweet. A fragment of time when people hand typed formal letters and in this case even photocopied some newspaper clippings that led this bride to find me after visiting several bakers .

Those were good ole days!♥️
