The Hibiscus plant, as you may already know, is a large plant that covers a range of tropical terrain, embodying several hundred species. I want my customers from different parts of this region, to relate to my diverse flavors so much, that hopefully they feel I have customized it just for them! My culinary journey began at the tender age of nine years old. The very first catering class I experie

nced was from Bernadine Gilks, who was my Mentor. She inspired me to be as adventurous and creative about creating our heritage delicacies. She was not only a caterer, she always treated me as the daughter she never had. She took me under her wings and taught me the art of catering and being creative with taste and food presentation. In 1994, I relocated from my beautiful homeland in the Caribbean, Trinidad and Tobago, to Tennessee. I began to introduce my culinary skills to my new friends, and then to their friends! I began cooking specialized Caribbean, Trinidadian dinners…each time, orders were being requested in larger and larger capacities! I hosted and participated events in the area such as dinners at my home (formally An Array of Taste Catering and Friday Night Live), vendor events like; Festival of Nations, Nashville Fall Festival under Caribbean Connections, CANA (spell out CANA)Caribbean event in Huntsville Al., and The Jerk Festival in Clarksville, TN. My cooking talents expand to other events such as weddings, baby showers, birthday parties, office and church events . I have expanded my business by great referrals from my current customers. When you taste my cooking, I want you to taste all the colors of the Caribbean and all the movement from our Caribbean cultures! This experience is truly a blessing and I feel this True Caribbean is right where she needs to be. I am a culinary artist because I love good food! I enjoy trying other dishes from other Caribbean businesses and ethnic groups to continue to bless my fellow man, my neighbor. It is my hope, that you find your own experience with Hibiscus Catering, a different experience that will keep you wanting to chat more about it! I look forward to providing you with a True Caribbean food experience!

This the infamous Doubles or Bara from Trinidad and Tobago. An Indian vegetarian delicacy. Consist of curry Chick peas, a soft dough bread "Bara"and cucumber chutney "chow" and pepper sauce if desired.
