🌶️ Big heat meets pure science. We just finished running two experiments using 120-proof Everclear to extract flavor for our next hot sauce batch.
The results? Absolute perfection. 🌶️✨
Using an alcohol extraction method really elevated the peppers. It pulled out all the bright, fruity, and floral notes while mellowing out the harsh sting of the heat just a bit.
We let both batches sit for exactly 8 days, and here is what we learned:
The Habanero Batch: Surprisingly tamer than expected! Habaneros are naturally small compared to Fresno peppers, which likely lowered the overall heat output for this batch.
The Fresno Batch: We used massive Fresnos for this one. Since they are so big, we think they could have actually sat in the alcohol even longer to maximize the extraction.
You just might see these bad boys drizzled over some tacos we serve one day soon. 🌮

Hot sauce, but make it mad science. 🧪🌶️
We’re running a parallel flavor experiment using modern molecular gastronomy! We’ve got two batches currently soaking in high-proof alcohol:
🔥 Team Habanero (The spicy heavy hitter)
❤️ Team Fresno (The smooth, fruity favorite)
Here is the plot twist: discarding the alcohol liquid afterward actually strips away the blistering surface heat. It tames the wild burn while keeping all the rich pepper flavor and creating a velvety texture.
