Pretty proud of this one ☝🏻 Lamb carbonara with handmade Cavatelli and house cured lamb bacon. Anytime I have lamb racks on menu I save the trim from frenching and use it to make this beautiful bacon. Cured for 3-4 days in a fennel pollen and allspice mixture and then lightly smoked.

Don’t let the smile fool you, being a small business owner is FREAKING HARD sometimes. The thoughts “Am I doing enough? How can I do more? Is this good enough?” Are constantly running in the back of your mind. But after a long day of cooking my food for people and seeing their happy faces make it all worth it and I wouldn’t change a thing. I promise to be more present on here and share the love and the food 💕
