excess chicken stock! not gonna lie … basically 3 whole chickens made this. we also included tje bones we saved from wings and fried chicken!!!

and then of course celery, carrots, onion and whole heads of garlic.

perfect base for any soup.

Part of being sustainable is doing our best to avoid single use items as much as possible and to reuse take out containers and jars 🙂 these contained home made lamb stock and lamb stew that we are prepping for service on Sunday.
Every time we eat anything with bones (frequent) we save them to turn into bone broth! We rarely ever have to use store bought chicken stock because we always have it! This also includes duck and pork which we frequently eat bone-in or in the case of duck, is the whole carcass! Alexis Sin

Roasted duck is one of our staples!! We love roasting whole birds because of the sustainability! We can get 3 different meals out of it, and then utilize the carcass for bone broth to stretch it even further!
