Ingredients
2 lbs Potatoes (I used baby potatoes)
1 medium yellow onion
13 oz turkey sausage, or Polska Kielbasa sausage
10.5 oz of cream of chicken soup
½ cup sour cream
2 cups cheddar cheese
Cajun seasoning
Garlic powder
½ tbsp olive oil

Preparation
Heat some oil on your pan and once heated add your sausage, and chopped onion.
Wash and dry your potatoes and cut them into ¼, or into inch sized pieces for regular sized potatoes.
Spray your crock pot with cooking spray (this WILL stick), and add your onions.
In a separate bowl, mix together your cream of chicken, sour cream, and seasonings. Add half of your cheese, and mix together.
Once your sausage is browned, add over top of your potatoes. Then add your cream of chicken soup mixture.
Cover, and cook on HIGH 4 hours, or LOW 6-7 (cook time varies depending on what potatoes used).
30 minutes prior to serving, add remainder of your cheese and stir.

Tips
You can add different vegetables to this dish as desired. I usually will cook separately.
