Tri tip and college football for the win. Seasoned this one with Prime Beef and Hot . Smoked at 200° on the Ranger using hickory pellets till 115°. Rested 30 minutes while I got the cast iron insert screaming hot for the sear. Loving this rub combo and the ranger for Tri tips.

Tomahawk tonight for dinner. The and tag teamed this cook. Smoked on the can till 120 ° with a small chunk of cherry , rested 20 minutes, then seared off on the Pk using my awesome . Seasoned with my new favorite beef combo of Prime Beef and a light dusting of Killer Hogs Hot.

Great experience with great friends. Honored to have helped cook this awesome contest.

So we finally got around to getting the trailer unloaded and admire the awesome hardware from in Galax! We were lucky enough to finish 1st place chicken with a perfect 180, 1st place in Ribs, 9th place in pork, and 3rd place in brisket! That was good enough for GRAND CHAMPION! Congratulations to .mixon on Reserve Grand! This would not have been possible without and the best butcher in the world !! Also I would not have been able to do it without the help of !! I am still pumped and ready to get a few more competitions on the schedule soon! We will definitely head back to Galax next year. It was one heck of a time!

Great times with great friends !

Finally home after traveling 1250 miles to and from in Galax, Virginia. Let’s just say we had a great cook and even better time. More to come tomorrow once we get the trailer and smokers unloaded. Huge shoutout to for the awesome help! We couldn’t have done it without , and which just happens to be the ultimate combination!!

Do yourself a favor and go get the new prime beef rub. Using only this rub i was able to get a perfect score in the exotic category at Memphis In May 2021. Tonight I used it on this thick tomahawk using the ranger. Smoked it at 220 till 120° then seared off on the cast iron insert . This little grill is a cooking machine.

Chuck roast in a red wine mushroom sauce this evening. Seasoned the roast with Mississippi Grit and Killer Hogs Hot then threw it on the Weber using the Sns for some hickory and cherry smoke. Before pulling the roast , I made a red wine mushroom sauce and reduced it till it was thick since the roast would still render some fat in the dutch oven. Topped the roast with more mushrooms and a onion and braised it till it was fork tender. One of my best roasts to date !
