Lotuswood Organic Wellness Farm is a beautiful 12-acre regenerative farm and events venue situated in New York's scenic Delaware River Valley. Ayurvedic chef and co-owner Andrea Hayley-Sankaran strongly believes that "food is medicine." Her plan is to grow the highest quality produce, then cook it into the highest quality prepared foods, so that her community will be healthy and well nourished. Ou

While you're here, you can treat your senses to expansive views, stroll past the working farm, pick fruit from the orchard, take photos at our many scenic spots, or marvel at our famous koi fish. It’s January and winter has fully settled in at Lotuswood. ❄️✨

Though frost has kisses the land since November, these quiet mid-winter days are when the farm fully finds its rest. As we reflect on the past year, our hearts remain full, still echoing with the laughter, vows, and celebrations that filled these fields with life.

We’re currently in our winter resting period, but nothing here is ever truly still. In organic farming, dormancy is intentional—a time to pause with purpose. While the land sleeps, we’re working behind the scenes to reset, recharge, and prepare for what’s ahead. Every detail is being thoughtfully planned to ensure the grounds are at their most vibrant for our 2026 couples.

And while the fields rest, our books are wide open. We are now officially booking for the 2026 wedding season. And because we know how quickly dreams take shape, our calendar for 2027 is open as well.

COVER CROPS. A key component of regenerative farming. Farming regenerativelu goes beyond farming organically. Not only do we not use chemical fertilizers or pesticides, but we also use the ways of nature to support nature. Cover crops feed, cover, and aerate the soil to prepare it for planting production crops 🥕🥬🫛 ensuring the healthiest plants to support the ecosystem, and most nutritious plants for human consumption.

Cover crops are plants grown primarily to protect and enrich the soil rather than for harvest. They are typically planted between main crop cycles or during fallow periods to keep living roots in the ground year-round. Common examples include clover, rye, vetch, radish, and oats.

Importance to Regenerative Farming:
Cover crops are a cornerstone of regenerative farming because they restore and maintain soil health—one of the most vital elements of a resilient agricultural system. Their benefits include:
1. Soil Fertility and Structure:
Cover crops add organic matter to the soil as they grow and decompose, improving soil texture and boosting microbial life. Leguminous cover crops (like clover or vetch) fix atmospheric nitrogen, naturally replenishing this essential nutrient without synthetic fertilizers.
2. Erosion Control:
Their roots hold the soil in place, preventing erosion from wind and rain while protecting the delicate topsoil layer that stores most nutrients.
3. Moisture Retention:
Living cover and residue from dead cover crops reduce evaporation and keep soil moisture stable—especially valuable in dry climates.
4. W**d and Pest Management:
Cover crops suppress weeds by shading the soil and outcompeting invasive species. Some varieties also disrupt pest life cycles and attract beneficial insects.
5. Carbon Sequestration:
Through photosynthesis, cover crops pull carbon dioxide from the atmosphere and store it in the soil as organic carbon—an essential part of regenerative agriculture’s climate benefits.

We had a great time today at Deutsche Bank's Diwali celebration in Manhattan sponsored by Asian Leadership Forum. I met so many great people, and the performances were beautiful also.
