Chicken soup

2 or 3 stalks of Celery
1 onion sliced
1 leek sliced
1 pepper sliced
6 cloves of garlic smashed
1/2 can. Of tomato sauce
Thyme & a pinch of oregano
3 or 4 leafs of culantro
1/2 of a chicken on the bone
2 boxes of chicken stock plus water to cover
Salt and pepper to taste
Lemon and lemon rind
Grated ginger and grated turmeric
1 or 2 potato peeled and cut into 1 inch pieces
1 or 2 malagas peeled and cut
1/4 of calabasa clean seeds off and cut into pieces (leave skin on)

Saute’ the first 5 ingredients with a little olive oil add tomatoes sauce, chicken stock plus the rest of ingredients, add chicken and simmer for a couple of hours till chicken falls of the bone, debone chicken add back to the pot. Add root vegetables when chicken falls off the bone so they dont over cook, till root vegetables are soft. Serve and add lime 😊 enjoy
