I realize that what I am about to write may offend some of my followers, clients, family, and friends. Before I begin I want to say that it is never my intention to offend anyone or disrespect their beliefs; therefore, I apologize if anyone takes offense at what I’d like to express. It is against my very spirit to even be able to sleep tonight after what we have all witnessed happening in our beloved country today without saying something about it.
The events that have taken place today have been incited by a man that has continued to prove that he is anything but presidential. A “leader” who has promoted violence, racism, division, and just earlier today said his right hand man - the Vice President of the United States lacked courage. I will not be silent and pretend any of this is okay. I am heartbroken at the shameful acts that have taken place on what some may almost consider sacred ground - our Capitol.
My grandparents fled a communist Cuba in 1968 to give my mother a better life on free land. A land of democracy. The followers that can blindly support the level of crazy Trump has reached are similar to those that supported Castro during the revolution without realizing they were supporting a lunatic that turned the most beautiful and progressive island in the world into what it is today - a ruined and lost country. I pray that this man is stopped and removed from office immediately. I pray for peace and I pray for a better America - the one my grandparents fled to because this one - the America I live in today and have my children in - I don’t recognize! In order for us to heal we must accept what was incited today is not only wrong, but UN-AMERICAN! May God bless our country - we are so lost. For those of you that have supported him - please save your party and denounce this evil man.
“In the end, we will remember not the words of our enemies, but the silence of our friends”-Martin Luther King, Jr.

World Prematurity Day.
I was 28 weeks pregnant when I was rushed to emergency surgery to deliver my baby 12 weeks early. As they pumped my body with steroids and wheeled me into the OR, they warned me I would most likely not hear him cry when he would be delivered because his lungs weren’t strong enough, they also told me that boys had a lesser chance than survival than girls, and that they would do everything they could for me and my baby. With a prayer in my heart all I asked for was to be able to hear him cry and have the best Doctor for him available. As they began surgery, I continued fervently praying and asking God for those two things. The Doctor tells me “you’re a lucky girl, the head of the NICU is on call today you have the best of the best” - that was one of the answers to my prayers, as they were performing the c section , the Dixie chicks were playing on the radio (they were my favorite band at the time) and as soon as they pulled him out HE CRIED OH SO LOUD! Dr. Alexander took over from there and introduced me to my son Benjamin before taking him away to the NICU.
Benjamin Alexander Chavez was 2lbs 10oz of perfection.
The next six weeks in the NICU were the closest to my Heavenly Father and the ones where I exercised my faith and realized the depths of my love for this tiny human I get to call my son. He is now 18, 6ft tall, and the kindest and goofiest soul you could ever meet.
Benjamin, I am so blessed for the miracle of YOU. You came here to do big things and shine your bright light in this dark world. I love you my sweet boy.

Oye Chico! Modern Cuban Pop Up Opening Weekend, October 16,2020. Reservations required. Sat 10/17 SOLD OUT

17 years ago I was asked by a friend to create a dish for Hispanic Heritage month at her school - she was a teacher. Of course, she asked me to make something Cuban. Let’s keep in mind I had a set of twins in first grade, a one year old and a newborn. I was a stay at home mom and part time nursing student. I’ll never forget I had to call my Mom and have her coach me over the phone on how to make it. Needless to say - they LOVED it and Suzanne Michael was born. In honor of my very proud Cuban Roots - please join me in celebrating my heritage and my 17th year in the industry with our Pop Up - “OYE CHICO” modern Cuban cuisine made with lots and lots of LOVE. Going back to my roots I am partnering with my dear friend and Event Planner extraordinaire aT her beautiful space in the heart of Coral Gables THANK YOU MIAMI for all of the love and support you have always shown me. I am blessed!

In 1969, when black citizens in the United States were not permitted to swim in community pools along side white people, Fred Rogers brought a black police officer to his television show and invited him to cool his feet with him in a small, plastic wading pool. Mr. Rogers then helped Officer Clemmons to dry his feet.
Remind you of anything? "After dinner, Jesus poured water into a basin and began to wash his disciples’ feet, drying them with the towel that was wrapped around him." (John 13:4-5).
Mr. Rogers never openly preached on his show, despite being an ordained Presbyterian minister. Yet he preached volumes in this simple act of love. In a world seemingly filled with hatred, where you can be anything, be a Mr. Rogers!

After much reflection and feedback, I realized I was not specific enough about who this post was addressed to. It is specifically addressed to people like me: the children and grandchildren of white Cuban-Americans in Miami who left Cuba during the first wave of exile. My grandparents belonged to the first wave, arriving in the early 60s, and were upper-middle class in pre-Castro Cuba. This was intended for a very niche audience. I was not insinuating that all Cuban-Americans subscribe to the ideas I discuss in my post. Using second-person narration is a writing technique; it’s not meant to be taken literally. We have all had very different experiences in the diaspora, and this is mine.
Thank you for everyone’s feedback—both positive and constructive. I appreciate it all and value your input. ❤️

Love in the time of Corona. Covid has kept us in our homes, cancelled celebrations, graduations, work, school, and togetherness. Our new normal is a mask, social distancing, and even seeing our loved ones behind a glass. Today it reminded me that love wins and nothing will stop it! It gives off a feeling and light that no one could reject. I didn’t personally know this couple before working with them, but I was so excited for them and excited to be part of this mini celebration for his bride. He planned a proposal during a trip that was cancelled by Covid. He celebrated their love ANYWAYS. He made it special, romantic, memorable, and then zoomed their loved ones while we served them dinner on the balcony. Thank you for giving us this “love high”. Love 1: Covid 0

The Dynamic duo created a better-for-you version of the classic Cuban dish Vaca Frita. Made with Eat Me Guilt Free’s Protein Tortillas and fresh, whole ingredients, these Chicken Vaca Frita Tostadas are super easy to make and packed with flavor. Tune in and take a look at how they put a delicious twist on the classic dish. Enjoy!
Here's the recipe for 4 Chicken Vaca Frita Tostadas ⤵️
Chicken vaca frita ⤵️
1. Boil 4 lean chicken breasts for about 20 minutes until cooked
2. Let the chicken cool then shred and add the juice of a lime, a dash of garlic powder, and salt
3. Heat a pan with avocado oil then evenly add the shredded chicken, allow it to crisp on the bottom before stirring
4. Meanwhile sauté 1 sliced white onion in avocado oil until soft and slightly browned
5. Mix the sautéed onions with the chicken and cook for 1-2 minutes
Maduros (fried sweet plantain) ⤵️
1. Chop a plantain
2. Sauté in ghee until soft and browned then set aside
Black Beans ⤵️
1. Boil a can of black beans for 10 minutes
2. While still warm add to blender and puree until smooth then set aside
Pico de Gallo ⤵️
1. Remove the inside of 2 tomatoes then chop
2. Chop a red onion and bunch of cilantro
3. Add all ingredients to a bowl then mix in fresh lime and salt
Kale Salad ⤵️
1. Chop a bunch of washed kale horizontally and add to a large bowl
2. Add a drizzle of olive oil, fresh lime juice and salt
3. Mix the salad and allow kale to marinate for at least 15 minutes
Jalapeño Sauce ⤵️
1. Sauté 2-4 jalapeños (depending on desired spiciness) in avocado oil for 5 minutes
2. Once cooled remove stems and seeds (be careful not to touch your face until you have thoroughly washed your hands)
3. Blend with 2 cups of greek yogurt, salt, and fresh lime until smooth
Tostadas ⤵️
1. Heat the tortillas in an air fryer on 350° for 3-5 minutes until crisp
2. Assemble the tostada first spreading black bean puree on the tortilla, sprinkle cojita cheese, kale salad, pico de gallo, chicken frita, then top with 1/4 a sliced avocado, jalapeño sauce and garnish with cilantro and green onions
