Our meats take HOURS of preparation—seasoning, smoking low & slow, resting, slicing, and getting them just right before they ever hit your plate. And those sides? They aren’t an afterthought! Our mac & cheese, collard greens, baked beans, potato salad, and the rest of the lineup take TIME to prep and cook too. 🍖🔥🥘

That’s why when we SELL OUT, we can’t always just “make some more.” You can’t rush a smoker. You can’t microwave patience. And you DEFINITELY can’t fake that slow-smoked flavor! 💨🔥

We would rather serve you QUALITY until it’s gone than cut corners just to say we still have it.

We want to give a HUGE shoutout to Pitmaster Darrell Clark of Legal Smoke BBQ for stopping by Poolie’s BBQ & Grill last weekend, showing love, talking BBQ, and bringing some blessings our way! 🙏🏾🔥🐷

One thing about us — we’ve always been transparent about this journey. We’ve shared the wins, the struggles, the food trailer days, the inspections, the long nights, the sold-out days, the mistakes, the lessons, and now the transition into having a restaurant. We don’t want people to only see the finished product — we want y’all to see the PROCESS behind it.

Poolie’s didn’t just appear overnight.

🚚 It started with a food trailer, a vision, faith, and a whole lot of work.

🔥 We kept firing up those smokers.

🛞 We kept that Wagon Wheel rolling.

🙏🏾 And through every door that opened, every person who supported us, and every blessing along the way, we’ve continued to give God the glory.

That’s why it means so much when another pitmaster like Darrell Clark takes the time to come through and show genuine support. In this BBQ world, there’s enough smoke for ALL OF US! 💨🔥
