Made a super yummy salad with Thai peanut dressing
For one serving:
1/2 c iceberg, shredded
1/4 c red cabbage shredded
2-3 T carrots, julienned
2-3 T cucumber, julienned
2 T cilantro
2-4 T edamame, shelled
3-4 oz chicken breast, baked & sliced thin
1 T peanuts, chopped
2-4 T wonton strips
2-4 T Thai peanut dressing
Dressing:
1/4 c peanut butter, smooth or chunky
2 T honey
2 T soy sauce
2 T rice wine vinegar
2 T lime juice
1 t ginger, minced
1 t seasame oil
1 cl garlic, minced
1/4 - 1/2 t chili flakes [optional]
2 - 4 T warm water, thin to preference
PS ... with 2 T dressing, this salad was only 10 points on weight watchers, and VERY filling / satisfying
