Honored to prepare appetizers for the Cobb Chamber's Chairman's Club. I went with a large Anti pasta display( a little something for everyone) stuffed mushrooms, chicken and potato waffle, pimento cheese and bacon jam and apricot and strawberry cakelets. Awesome staff. Long day but a great event!

If there is a meat or fish product you need(ie cow's tongue or chicken feet) they have it! And there's more that you will only discover when you go!

I am happy to announce that I graduated from the Cobb Chamber's Leadership Cobb Program last week. I've met fantastic people, learned more about this county that I adore and as the icing on the cake, I was awarded the Wyman Pilcher Jr Award which is presented to a class member in recognition for their philanthropic efforts over the course of the year.
What an honor to be nominated for Leadership Cobb, to be accepted, to find lovely people as your classmates and to be recognized. Blessed beyond measure!

In January I started a new teaching gig. Through the Davis Direction Foundation, I've started teaching health and cooking classes to individuals in drug and alcohol recovery programs.
Yesterday my first group graduated! So very proud of these men. I'd adopt every single one of them.
They learned how to cook all the basics AND they made the food for their graduation.

I had the honor of cooking for a Deployment Party for an Army Black Hawk Pilot.
My team and I prepared Two meals for this party.
It started with a Pizza Bar, Chocolate Fountain, grilled cheese with tomato soup shooters, chicken and waffles and a veggie tray.
At 11 pm the second buffet included late night fare. Quesadillas, tater tots with cheese and chili, Mozzarella Cheese Stick Dogs, Artichoke Dip and Sriracha-Lime Potato Chips AND Cereal Milkshakes!

Taught a French Dinner Class last night at The Cook's Warehouse at Peachtree Station. A very full class with 18 that didn't feel as full because there were so many wonderful people in the kitchen.

The menu included French Onion Soup, Asparagus with Beer Bernaise, Potato Gratin, Steak Au Poivre, Nicoise Salad and Apple Roses.

Today's client's menu included Pecan Crusted Trout with Red Pepper Sauce, Beef Tips(made in the IP), Cinnamon Bun Scones...

Today's client's menu included Pecan Crusted Trout with Red Pepper Sauce, Beef Tips(made in the IP), Cinnamon Bun Scones and Chicken and Dumplings.

I thought I'd share Chicken and Dumplings Recipe.
1 Whole Chicken
1 tablespoon of salt
1 onion, chopped
2 celery stalks - chopped
2 carrots, sliced
1 lemon, halved
2 cups AP flour
4 tablespoon butter, softened
1 teaspoon salt and pepper

1. Place chicken and 1 pinch salt in a large pot; cover with water. Bring to a boil, skimming any scum off the surface with a slotted spoon. Add lemon, celery, onion, and carrots. Simmer broth over medium heat until chicken starts to fall off the bone, about 1 hour.
2. Discard lemon. Remove chicken from the pot; let cool.
3. Place flour, salt, and pepper in a large bowl. Cut in softened butter. Make a well in the center. Ladle in 2 to 3 scoops of hot broth. Mix in flour with a spoon until dough comes together into a ball.
4. Turn dough out onto a floured surface. Knead carefully until smooth. Roll out into a large rectangle; cut into small rectangular dumplings.
5. Drop dumplings one at a time into the simmering broth. Cook, stirring occasionally, until tender, about 30 minutes.
6. Bone chicken and chop into pieces. Add to the pot; cook until heated through, about 5 minutes.
