Whichever you call it, this beef groundnut stew is so easy and delicious!
Seasonings used: Badia complete seasoning, garlic ginger and all spice powder, onion powder, dried thyme, dried crayfish powder, chicken bouillon powder, salt, meat seasoning, and bay leaf

Steps: clean your meat, add your Nokos (which is a West African blend of fresh veggies and herbs)

Mine was green onion, red onion, green bell pepper, scotch bonnet pepper, tomato, and garlic

Add that and your seasonings to your meat. Boil on medium high heat with tomato paste and ground nut paste diluted w/ water so it doesn’t clump. Add veggies of choice. I added carrot sweet potato and cabbage. It stewed for 2 hours until it was fork tender and I served it w/ white rice

Here’s what I made for this week’s post partum meal for my best friend who just gave birth. We LOVE Mexican food and she and her husband requested tacos refried beans and Mexican rice 🌮 🇲🇽
