Autumn is here! Poulet à la forestière is an excellent choice for a celebration menu this time of year- think of it as an elevated comfort food. Herb marinated chicken is seared, rested, & just before service gets bathed in a creamy mushroom & w**e sauce & topped with vibrant microgreens. This herbal tea blend has been steeped overnight with additional herbs & fruit, creating a delicious & refreshing infusion. Use of the Sideritis (or ironwort) plant has roots tracing back to Ancient Greece. The herb itself is harvested from plants that grow at a high elevation in the mountains of Greece.
