As I stepped into 2025, the two words I’m focusing on this year are discipline and consistency in all things in my life. I knew my diet needed a complete reset, so on January 15th, I kicked off a 21-day vegan challenge. It hasn’t been too hard; I’ve just had to get creative with the foods I typically enjoy. I’ve still been preparing meat and vegetarian meals for my kids, but this change has been both interesting and rewarding.

The biggest challenge has been resisting my cravings for sweets, but starting today, I’m cutting them out for the remainder of the 21 days. Now, the next step is incorporating some exercise into the mix to really round out the transformation.
