Venison filets...frozen in Cab. Sav. & rosemary, seasoned, tossed in flour and sear in veg. Oil... Added red wine after boths sides seared, reduce...and added reduced venison stock, reduce and final seasoning.....mine will pull apart w 2 forks

After 48 hrs. On low....bones removed and reduced by 4X....Will pull fat off tomorrow, reheat and strain....good hack i learned was to pour into ice trays for portions!!!

Venison stock...water, gallon of my wine, white wine, onions, celery, roasted bones, garlic and ginger.....reduced for 48 hours, till thick from cartilage and gelatin from bones!!!! Great base for multiple sauces!!!!!

12 lb lean brisket, 4 lbs beef fat (processors best prices during deer season is @ Brookshire Brothers), & at least 50lbs trimmed whitetail( very little game)

Saw new views... Only been cooking for friends and family here lately. Anyone ever wanna talk about anything culinary or if anyone has any extra berries or grapes I will pay by pound....wine season in few months!!!
