A pop up for a great cause. 11 courses paired with wine and cocktails for 24 special guest, led by "Real Men Wear Pink" & "Rainey Day Gourmet" to
present "A Perfect Pair," a chef's tasting menu at the Cypress Tap House for the American Cancer Society. Thanks to our RMWP Ambassadors, Michael Brolaski & Grant Cooley.
1st Course (bread): European grass feed butter board dressed in honey, confited garlic & oil, toasted pine nuts, maldon salt, fresh cracked black pepper, & edible flowers. Served with fresh baked "pink" frog rolls & pistolettes
2nd Course (appetizer): Brie cheese stuffed Madjool dates wrapped in candied bacon drizzled with blood orange & balsamic vinegar reduction
3rd Course (salad): Camprasse salad of heirloom tomatoes, fresh buffalo mozzarella, dressed with walnut & basil pesto
4th Course (cheese): Pasta shells stuffed with spinach sauteed in garlic oil & ricotta cheese blend, steamed in white wine cream, and served on a slate tile smeared with thick Alfredo sauce.
5th Course (soup): Grilled watermelon gazpacho (chilled) with heart of melon, mango salsa, & Mexican table cream
6th Course (1st main): Brazillian Moqueco of red snapper filet & gulf prawns
7th Course (palette cleanse): Mango sorbet
8th Course (2nd main): Smoked lollipop wings with West African jollof rice, Oaxacan mole Negro sauce, and Salvadorian table cream
9th Course (palette cleanse): Lemon-chello sorbet
10th Course (3rd main): Smoked lamb rib chop seasoned with Blackout Rub & served with creamy smoked gouda polenta, topped with minted chimichurri sauce
11th Course (dessert): Luxardo cherry & dark chocolate bread pudding (made with Jewish Chaulla bread & Irish brown bread) with Noah's Mill Bourbon custard sauce.
