I’m just a local boy from Hawaii that got to share the stage with world class Chefs again. I’m living and pursuing my dreams because of all of your support 🙏

From the bottom of my heart, thank you to Hawaii Food & W**e Festival Denise Hayashi Yamaguchi Roy Yamaguchi Alan Wong's Honolulu for bringing me back for a 2nd year and allowing me to share my heart for Hawaii and Polynesian flavors through food. I never take any of these moments for granted.

Especially being able to share the stage with my Dad, Executive Chef Jason Kina, the man I look up to the most.

I second guess my ideas because I’m not a fancy chef or classically trained so it meant the world to hear how much the guests loved my dish; many saying it was their favorite. Moments I will cherish ❤️

Huge shout out to my team! Chef Mari Wills, MS, RDN Budz(hawaii) @. Thank you for helping me bring my vision to life through your hardwork and time. We legit rolled 650 mini laulaus and sold out in 2.5hrs. I couldn’t have done it without you guys!

My beautiful and amazing Wife Tayler Kina, I’m only here because you are my biggest cheerleader and encouraged me to pursue my dreams 🥹🥹❤️

Thank you, Dad, for being with me each big moment of my short career; pursuing my dreams to continue to carry on your legacy. I’m here because of your hardwork ethic and leadership as you served Hawaii kitchens throughout your career.

Served with an Asian umami beurre blanc sauce and topped with lomi and crispy shoestring kalo

I wanted to honor and respect Hawaii’s most quintessential dish and elevate it blending my love for bbq and Asian flavors ❤️❤️❤️

Grateful to share the stage with Matt Pittman - Meat Church. I didn’t know how to bbq then 5 years ago I started to watch and learn from Matt Pittman. The skills I learned is what started 406 BBQ and jump started my career. Now I’m living my dreams because of him and it was a full circle moment to share the stage with him again 🙏

Crockpot Osso Bucco 🍖🔥

Fall-apart tender beef shanks, rich tomato gravy, creamy mashed potatoes, and that low-and-slow comfort food flavor that tastes like it took all day… because it did.

I seasoned the beef shanks with beef BBQ Rub, gave them a quick flour coating and hard sear, then built the flavor with carrots, onions, celery, garlic, crushed tomatoes, and Garlic Herb Rub.

Into the crockpot at high for 5 hours or until tender, then served over mashed potatoes with that sauce poured right over the top.

Easy, hearty, and packed with flavor. This is comfort food with a butcher shop upgrade. 🤌🏽

Grandma’s Mac Salad ❤️

Every family in Hawaiʻi has their own version of mac salad, and this one is special to me because it’s my grandma’s recipe that was passed down to my dad, and now to me.

Mac salad recipes can vary from family to family — some add carrots, some add potatoes, some keep it simple — but no matter how you make it, mac salad is one of the ultimate side dishes in Hawaiʻi. It belongs next to BBQ, kalbi, laulau, chicken katsu, teriyaki chicken, and every good plate lunch. 🤙🏽

For me, recipes like this are more than just food. They’re family history. They’re the small details that keep our people connected — the way your grandma made it, the way your dad remembers it, and the way you carry it forward for the next generation.

Simple, creamy, nostalgic, and made with love.

Grandma’s Mac Salad

Ingredients:

* 2 cups cold cooked macaroni
* 2 cups Best Foods mayonnaise
* 4 Tbsp diced celery
* 4 Tbsp diced onion
* 4 boiled eggs, grated

Instructions:

Mix the cold macaroni with Best Foods mayonnaise, celery, onion, and grated eggs.

Chill before serving and enjoy with your favorite local-style plate lunch ❤️

Meat Jun 🥚🥩🍚

Meat Jun is a Korean-style dish you might not actually find in Korea because it was created in Hawaii — thin slices of beef, marinated, coated in flour and egg, then pan-fried until golden. 🔥

It’s simple, nostalgic, and so good served over rice with mac salad, and that sweet-tangy dipping sauce.

Where is the best meat jun on the island?
Mine is Yummys or the one in Salt Lake I use to go after school (I forgot the name 😅)

Meat Jun Recipe

Ingredients

For the beef:

* 1 to 1 1/2 lbs thin sliced ribeye or NY strip
* 1/2 cup soy sauce
* 1/2 cup sugar
* 1 Tbsp minced garlic
* 1 tsp grated ginger
* 1 Thai chili, minced optional
* 1 Tbsp rice vinegar
* 1 tsp sesame oil
* 1 cup flour
* 3 to 4 eggs, beaten
* Oil for frying

Dipping Sauce:

* 1/4 cup soy sauce
* 1 Tbsp sugar
* 1 Tbsp rice vinegar
* 1 tsp sesame oil
* 1 tsp minced garlic
* 1/2 tsp grated ginger
* Thai chili optional
* Green onions for garnish

Instructions

Slice the beef thin, or use pre-sliced ribeye or NY strip.

Mix soy sauce, sugar, garlic, ginger, Thai chili, rice vinegar, and sesame oil. Add the beef and marinate for 30 minutes.

Dredge each slice of beef in flour, then dip into beaten eggs.

Fry in an oiled pan over medium heat until it’s golden on both sides.
