Smoked low and slow over hickory, one of the more difficult cuts in barbecue to really master. Seasoning’s gotta be on point. And even when it comes off the pit, you can’t rush it. That rest is everything.

I like to sauce it up. A mix of sweet BBQ stock with a splash of Worcestershire to lock in that flavor. Always trim off those burnt ends the crown jewel. I re-glaze them, throw ’em back on the smoker for another hour and a half. The result is tender, sticky, smoky bites that disappear faster than I can cut ’em.

That’s the brisket squeeze. That’s the love. That’s real barbecue.

14 hours on the pit… and this is what it looks like.

Beef short ribs smoked low and slow until they hit that fall-off-the-bone tenderness. Started simple with salt, pepper, garlic and I’ll admit it… I a touch of cinnamon into the rub. (Don’t tell anyone)

Nine hours of hickory smoke, pulled at 165°, wrapped in butcher’s paper, then pushed to 205° until they were ready and finished with OG hickory BBQ glaze.

It’s love, patience, and smoke all working together. One bite, and you’ll know what time it is.

We’ve been on a cornbread journey lately trying out every style we can come up with. From buttery cornbread muffins (yes, I cheat with liquid popcorn butter) to jalapeño & bacon cheddar, even a Hawaiian twist with coconut flakes.

But the one that’s stolen the spotlight?

Rosemary garlic cornbread baked golden, sprinkled with sea salt, and drizzled with hot honey.

Sweet, savory and unforgettable.

It’s become a must-have at every barbecue we do, and once you’ve tried it, you’ll know why.

What a weekend! From a backyard barbecue in Island Park, to helping friend celebrate his wife’s bridal shower in Massapequa (yes, with BBQ 😉), and then carrying on our yearly tradition with the Baldwin Fire Department serving 125 firemen and their families. It was nonstop fire, flavor, and hospitality.

None of it would have been possible without the crew. The long hours, the heavy lifts, the endless trays of food and stacks of dishes… everyone showed up and made it happen. (Kathy, Mario w/ his daughter, Adam, Crum, Eric, Andre, Sara)

The menus were as bold as the weekend itself with thai chili sausage & peppers, smoked brisket, baby back ribs, barbecue chicken leg quarters, and of course, the fan favorite our Mac that Smiles Back, topped with a crunchy Goldfish crust.

Three events. One weekend. Countless memories.
Here’s to the team that brings it all to life.

Burgers on the grill, smoke in the air, people laughing a few feet away, that’s my happy place.

Ribs are great, brisket’s good… but every good barbecue starts with a nice burger. Fresh off the grill, juicy, with all the toppings, lettuce, tomato, onion, pickle. We keep it simple, we keep it fresh, and we use a nice brisket–chuck blend seasoned with salt, pepper, and garlic for that perfect flavor and bite. That’s how you do it right.

When you roll in with a pig that’s been slow-smoked for 14 hours and stuffed with cornbread & sausage… you already know it’s gonna be a good day.

This past Sunday in Massapequa Long Island, we threw down for one incredible 50th birthday — 65 people, great vibes, and a menu built to make people smile. That pig? My new style, and it was a hit. Smoked barbecue chicken and maple bourbon shrimp didn’t last long, mac & cheese and that buttery keg of corn kept the plates full, and the melon skewers with hot honey and tajín had everyone talking.

The crowd was all laughs, the energy was high, and my team? Absolute rockstars. We crushed it start to finish and then, because we earned it, ended the night with the whole team jumping into the hosts pool before heading home.

August’s wrapping up strong… and September? We’ve got even bigger things cooking.

Lately, I’ve found the key to a perfect burger isn’t in overcomplicating things it’s in doing the basics perfectly.

Start with a solid SPG rub: Salt, Pepper, Garlic. That’s it. Keep it balanced, keep it even.

Then go in with a rich, juicy blend: 75/25 short rib and brisket. That fat content gives you flavor and sizzle you can’t fake.

Get that grill blazing hot no lukewarm nonsense. Sear it hard until you see that puddle of moisture form on top. That’s your signal. Flip it, finish it, and cheese it while it’s still hot.

Then land it on a soft, warm potato roll and serve it straight off the grill.

Simple. Charred. Juicy. Real.
That’s how I do burgers.
