Feeding The Soul • Sunday Bites

A weekly spotlight on the people, pop-ups, and concepts that move our city forward.

Built on craft, driven by integrity, and rooted in Long Beach.

I recently sat down for lunch with James from . When we were deciding where to go, I told him I wanted a real education on Cambodian cuisine past the surface level. Without hesitation, James told me exactly where to go and to have cash ready.

Admittedly, it is rare for me to enjoy a proper meal these days, let alone sit down for one.

Crystal Thai Cambodian Cuisine transports you into a space where time feels irrelevant and the only things that matter are quality time, food and conversation.

Long Beach is better because of it.

At the Sunday Marina Farmer’s Market on 2nd & PCH, you can find .la

Originally from Los Angeles, they’ve been frequenting our Long Beach Farmer’s Markets since their inception in 2022.

One week while shopping for a client, I was missing my uncle a little extra since his passing in early January. The word “mole” on their menu caught me mid-step and held me there. His favorite dish from my grandmother’s kitchen.

I walked over, asked if they made their own and if I may have a taste. Without hesitation, I was greeted with a totopo (chip) dipped in mole, served as it should be. I smiled from cheek to cheek, but then the flavor hit. The flavor sent chills down my spine. Identical to my grandmother’s, I immediately knew who I’d want to share this with and how much he would have loved it.

Since that day, it’s become my own little ritual. I visit them whenever I can, especially on the weeks I’m missing my uncle Ven a little more, just to feel a little closer to him.

Long Beach is better because of them.

Gracias for feeding the soulla 🫶🏽

MARKET REPORT • Origin Stories

A series dedicated to the people who shape how we cook, think, and refine our point of view.

Origin Stories exists to give credit where it’s due.
Mentors, family, collaborators, and the ones who move quietly behind the scenes.

The influence, the lessons, the lineage.
Not always named, but always present.

Lewis & Jared Friedman

A father son duo behind the weekly farmers market program at Ingardia Bros.

Before the sun rises, they make the drive from Orange County to Santa Monica, sourcing and fulfilling orders for kitchens across Southern California.

From Long Beach kitchens like Alder + Sage and Heritage, where farmers market sourcing is a point of pride, to Michelin-rated dining rooms across Los Angeles, their reach moves quietly but with intention. This level of sourcing doesn’t happen without them.

From peak-season produce to dairy, specialty goods, and pristine seafood, everything is selected with the same level of care and intention.

The program began with a simple idea from Lewis. One shaped by years as an Executive Chef and a childhood rooted in his father’s butcher shop in South Africa, where quality and care were the standard.

Jared followed that path with the same discipline. Having cooked alongside him, it’s clear his approach carries precision, awareness, and respect for the ingredient at every step.

What started as a suggestion has grown into a system chefs rely on.
A way to stay focused in the kitchen, while trusting what arrives has already been chosen with care.

Always behind the scenes. Always part of the story.

For the community, by the community.

What started as Fong’s Illegal Dumpling House grew through word of mouth and pop-ups, carried by a loyal Long Beach community, into something people now seek out across the city and beyond.

From dumplings to bagels, the throughline for Josh and Nancy has always been intention, consistency, and comfort.

There’s something to be said for places that live at the intersection of comfort, accessibility, and consistency. The kind of experience that truly resonates.

Long Beach is better because of it.

Thank you for feeding the soul

“ IN PRINT “ - Vol. I

One night only.
05.18.26 · 6PM

What begins as an idea is developed, layered, and brought to completion over time, forged with intention, craft, and care. The result is a progression essential in its sequence, only fully experienced by those who recognize the parallels across each discipline.

Our menu is led solely through a nine piece flash sheet by Tim Shelton of Still Life Tattoo, with each piece interpreted through mixology by Midnight Oil and gastronomy by Brown Butter Boys. Each course reveals itself in order, carrying the same structure, restraint, and precision as the process that inspired it.

Tables shared with people you know, people you’re meeting for the first time, and the quiet pause that settles in when food reaches the table. The holidays are about coming together.

This year’s Nochebuena and holiday services were rooted in that same spirit. Cooking for our community with intention, presence, and care.

Thank you to The Brown Butter Boys staff Hannah, Sammi, Asia, Jay, and Jacob, who carried that intention through every service. Together, over 1,118 dishes were plated across three days, five services, and multiple concepts.

Chef Moni, your continued support and steady presence help each supper club operate at its highest caliber, from preparation and pacing to guest experience.

Christopher Serrano, your transformative and inspired cocktails for every private client this holiday made each table unforgettable.

Daisy, your unwavering loyalty over years of friendship, cuisine, and contribution to the menu helped shape our 4th Annual Nochebuena Supper.

We’re deeply grateful to Tony, Kevin, and Barchie for the continued trust and collaboration.

As the year comes to a close, we’re truly grateful for the tables shared, the conversations held, and the priceless moments with our community. You have always believed in us and continue to give us the privilege of pursuing excellence and refinement through cuisine for our city.

Thank you for letting us serve you this holiday season, Long Beach. Onward into 2026, together.
