Happy Anniversary to !!! 🎉🎊 Three years ago a took a paid leave from Covid and opened my ghost kitchen to serve up authentic Vietnamese pho noodle soup & bánh mį. It all started with being away from home all the time & I wanted that comfort food that my mom always make. I’ve eaten thousands of bowls of pho noodle soup and nothing was savory or everlasting taste. What inspired me was during my studies in culinary in Vietnam, I met a food vendor has been making pho noodle soup from this old man’s 50 years recipe. I took the recipe back to America and started to craft the art of making pho noodle soup for my friends and family. I literally cried over the table when my Mother said, “my pho noodle soup gives her an everlasting taste.” To me, this was BIG because if you know anything about my Mother, she is very critical when it comes to Vietnamese cuisines and one of the best Vietnamese cooks I’ve ever had the experience to enjoy!!! So, today I’m honoring how far has come & all the customers that had an opportunity to eat my pho noodle soup & bánh mì. Im also take this moment to honor my belated Mother who was my #1 fan & cheerleader during the creation. I wanted to represent what it’s like to eat pho noodle soup without traveling to Vietnam!!! Also, wanted to thank my dearest friends and siblings who have been supportive of my journey!!! And also, my partnership with the University of Kentucky for having all over their space!
