Hi everyone!
I thought it was finally time to properly introduce myself.
My name is Amanda Bennett, and I am the owner and operator of Plum Rose Catering.
I was raised in Rupert, West Virginia, graduated from Greenbrier West High School, and then headed to Charlotte, North Carolina, to attend Johnson & Wales University. I spent eight years in Charlotte working under some incredible chefs, learning new techniques, refining my skills, and gaining experience in large-scale catering and wedding events.
One of the most influential years of my career was 2014, when I was part of a team that catered 78 weddings in a single year. It was long hours, hard work, and plenty of challenges, but it also sparked a passion for catering that has stayed with me ever since.
Like many West Virginians, the mountains eventually called me home. After returning and taking a few years away from the kitchen during the COVID era, I found my way to Hawk K**b in 2023, just four months after welcoming my son into the world.
Since then, Hawk K**b has become so much more than a workplace—it has become family. Building menus, growing a restaurant, and helping create memorable experiences for guests has been one of the greatest joys of my career.
In October 2025, I launched Plum Rose Catering as a way to continue pursuing my passion while creating something of my own. My goal is to remain a strong part of the Hawk K**b team while building a catering business that helps create a brighter future for my son and me.
One of my favorite things about being a chef in rural Appalachia is the incredible access we have to local farms, producers, and artisans. So many of my vendors have become friends, and their support has meant the world to me. Even before Plum Rose officially launched, I was fortunate to have a loyal group of clients cheering me on and trusting me with their special events.
Greenbrier County has always felt like home. The sense of community here is something truly special, and I feel incredibly grateful to live, work, and build my business in the place that raised me.
Thank you to everyone who has supported me, encouraged me, shared my posts, hired me, and believed in me along the way. I'm excited for what the future holds and look forward to helping make your gatherings, celebrations, and milestones a little more delicious.
